Safely Practicing Dietetics Across the Eating Disorders
Shane Jeffrey
Eating disorders are complex conditions that impact on a persons medical, nutritional and psychological wellbeing. With little or no training provided on the topic of eating disorders to dietetic students in the university sector, dietitians often feel ill equipped in the provision of care. This presentation will focus on the safety of practice for dietitians through highlighting three key principles (medical monitoring, the multi-disciplinary team, and professional supervision) that are integral when delivering nutritional care to people with an eating disorder.
Learning Objectives:
Understand the importance of integrating safety of practice principles when working with people presenting with an eating disorder
Identify key medical parameters that dietitians should be aware of during the course of treatment
Identify the importance of practicing as part of a multi-disciplinary treating team, and when to refer on/out
Understand the relevance of professional supervision when practicing in the area of eating disorders, and how to incorporate this as an essential part of safe practice.
About the speaker:
Working in the fields of eating disorders and the non-diet approach to weight concerns for much of his 25 year career, Shane Jeffrey is dedicated to helping people improve their relationships with food, mind and body through the provision of compassionate, client centred nutritional care. With a back to basics approach that is simple and uncomplicated, Shane developed the RAVES eating model to help people move towards a more positive, sustainable relationship with food. Shane currently works in two Queensland based private practices dedicated to the treatment of eating disorders, weight concerns and sports performance using a non-diet approach – River Oak Health and Food Mind Body.
Adverse Reactions to Foods
Dr Anne Swain
Adverse reactions to foods are estimated to affect 15 to 20% of the population. The consumption of natural and added chemicals in food has been shown to contribute to a range of adverse reactions, with clinical presentations frequently including functional bowel disorders, chronic urticaria/angioedema, and headache/migraine. Self-diagnosis and self-management by patients experiencing adverse reactions to foods is common, with risks of nutritional inadequacies and delays in management. Research findings regarding the RPAH Elimination diet and challenge protocol are available here and from various publications. An interactive RPAH Elimination Diet and challenge protocol seminar would help dietitians new to or working in the area of adverse food reactions.
Learning Objectives:
To upskill dietitians in the safe and effective implementation of the RPAH Elimination diet and challenge protocol in patients with food chemical intolerance.
Develop basic knowledge and skills related to the implementation of a diagnostic elimination diet, challenge and liberalisation protocols.
Refine skills in nutrition assessment when managing patients on restricted diets.
About the speaker:
Dr Anne Swain is recognised as a leading expert in the field of food intolerance and food allergy, both in Australia and overseas. She has been the Head Dietitian at the Allergy Unit of Royal Prince Alfred Hospital (RPAH) in Sydney for over 40 years. Anne is co-author of the book Friendly Food and the RPAH Elimination Diet Handbook. Anne has contributed to the development of policy and protocols for food allergy and food intolerance, for NSW Health, FSANZ and other professional organisations. Anne is involved in research, education programmes and has scientific publications and is a University lecturer and mentor to students and graduates.
