About the skills sessions speakers:

Caroline Weeks, PA-C, MPAS RDN, is a physician assistant with more than eight cumulative years of experience as a registered dietitian nutritionist specializing in pediatric subspecialties like gastroenterology, endocrinology and pulmonology. Passionate about nutrition and health communications, she shares valuable insights on several social media platforms, has appeared on several major news broadcasts including CBS and USA Today, and actively mentors aspiring healthcare professionals. She regularly spends her time as a pre-PA coach and has helped inspire countless dietitians to follow her footsteps and further their own careers by pursuing the path to physician assistant. 

 

 

 

Jane Guo, RDN, LD is a registered dietitian and founder of Habits Nutrition Counseling where she specializes in bariatrics and weight management. Driven by a passion for advancing the field of dietetics, Jane empowers fellow dietitians to leverage AI, to work smarter and more efficiently. She leads the AI Powered Nutrition community on Facebook, a collaborative group where dietitians can exchange ideas, insights, and strategies for integrating AI into their practice. She also creates educational content on TikTok @AIpowerednutrition, teaching the public how they can use AI for nutrition-related contexts, and cautioning them on the limitations of AI for obtaining nutrition information. 

 

 

 

About the panelists:

Tony Castillo, MS, RD, LDN began his journey as an overweight middle schooler, leading him to explore nutrition after experiencing unsustainable weight loss through dieting. His fluctuating weight in college inspired him to understand how nutrition affects the human body. Today, Tony is passionate about teaching others how healthy lifestyle modifications can optimize performance in all areas of life. With experience at the University of Florida and the Toronto Blue Jays, he focuses on helping clients become elite performers, whether in sports or business. Tony graduated from Florida International University with a B.S. in Biology, B.A. in Chemistry, and an M.S. in Nutrition and Dietetics. 

 

 

 

Stephanie Dobak, MS, RD, LDN, CNSC is a dietitian at the Jefferson Weinberg ALS Center in Philadelphia. After 12 years in inpatient care, she transitioned to outpatient work in 2020. Stephanie has conducted multiple research studies, securing $120,000 in grants, with results published in national abstracts and peer-reviewed journals. She has taught nutrition, medical, and pharmacy students and neurocritical care fellows. Passionate about ethics and palliative care, she shares her expertise through podcasts, blogs, webinars, and national presentations. Stephanie has held multiple leadership roles within the Dietitians in Nutrition Support DPG and is currently past-chair of the Northeast ALS Consortium’s nutrition subcommittee. 

 

 

 

Emily Garrett, MS, RD, LD completed her bachelor’s and master’s degrees at Winthrop University, with graduate research focused on the relationship between mindful eating and the hypothalamicpituitary-adrenal (HPA) axis. Her research ignited a passion to help individuals achieve freedom with food through understanding the physiology of appetite and stress. During her path to becoming an RD, she worked as a health coach to help clients build sustainable habits, manage stress, and develop a healthier mindset toward food. Emily completed her Dietetic Internship and became credentialed as a Registered Dietitian in 2024. She currently works as a clinical dietitian in the Atlanta metro area. 

 

 

 

About the moderator:

Dawn Jackson Blatner, RDN, CSSD is the author of two acclaimed books: “The Flexitarian Diet” and “The Superfood Swap.” She regularly contributes to online and TV outlets, starred in (and won!) a primetime reality TV show, and hosted an Emmy-nominated TV show in Chicago. In addition to her media experience, Dawn worked as the head dietitian for the Chicago Cubs for 10 years. She is an expert spokesperson for some of the biggest national brands. And believes joy is a nutrient.
