  • Exploration and demonstration of how to use various AI products: 
    • Prompt engineering with a focus on dietitians as educators presented by Jane Guo, RDN, LD 
    • Deep research and specific tools with a focus on dietitians as researchers presented by Raul Palacios, MS, RDN, LD 
    • Efficiency in content creation with a focus on dietitians as communicators and leaders presented by Drew Hemler, MSc, RD, CDN, FAND 
  • Ethics and boundaries including how to address issues related to privacy, bias, misinformation presented by Raul Palacios, MS, RDN, LD

About the speakers:

Drew Hemler, MSc, RD, CDN, FAND is a Canadian American dietitian focused on tech, professional practice, and practitioner development. He’s worked across academia, clinical, private practice, and consulting for 10 years supporting initiatives in employee training and program design. Drew has collaborated with organizations including Microsoft Canada, TELUS Health, the College of Dietitians of Ontario, and the Academy of Nutrition and Dietetics. He incorporates AI and its key technologies into course content for student real-world prep. A proud Fellow of the Academy of Nutrition and Dietetics, Drew serves on its National Nominating Committee and is concluding his term on the Committee for Lifelong Learning. 

Jane Guo, RDN, LD is a registered dietitian and owner of Habits Nutrition Counseling. She helps clients navigate weight loss, bariatric surgery, and GLP-1 medications with an evidence-based, compassionate approach. She believes sustainable health changes aren’t about quick fixes, but about building habits that last. Throughout her practice, she’s seen how technology can enhance the way dietitians deliver care, which led to her second passion: helping dietitians integrate AI and smart systems into their work. She teaches dietitians how to use technology responsibly to streamline workflows, improve client education, and reduce burnout. At the core of both roles is a commitment to making nutrition care more effective, accessible, and impactful—whether by guiding clients toward better health or empowering dietitians to work smarter. 

Raul Palacios, MS, RDN, LD is a practicing Registered Dietitian and Director of the Didactic Program in Dietetics at Texas Tech University, which is at the forefront of integrating artificial intelligence into nutrition and healthcare education. With balanced enthusiasm, he educates others on both the opportunities and limitations of emerging AI technologies. Raul is active in the AI–nutrition–education space, having served on the Academy of Nutrition and Dietetics’ AI in Education Workgroup, currently serving as a guest editor for the International Journal of Obesity’s AI Special Edition, and teaching Texas Tech’s AI Fundamentals course for future healthcare professionals.
